Vincent Abe-Inge, an alumnus, national service personnel and currently a postgraduate student in the Department of Food Science and Technology, KNUST, received the Best Poster Presentation Award in the 1st ASoFoST International Conference. The conference which was held in Accra from 2nd – 4th August, 2018 hosted scores of researchers in the areas of Food Science, Food Technology and Agriculture from Universities across Ghana and Nigeria. As part of his award, Mr. Abe-Inge was immediately granted membership of the African Society of Food Science and Technology and will be exempted from paying dues for his first year of membership.
Mr. Abe-Inge (supervised by Dr. Jacob Agbenorhevi) presented a poster on his research project that investigated the potential of African Palmyra palm (Borassus aethiopum) fruit flour in food applications. The goal of his research project was to maximize the utilization of the currently highly under-utilized yet nutritionally valuable fruits. His research finding indicated flour from Borassus aethiopum fruit has high dietary fibre as well as significant amounts of beneficial phytochemicals and hence has great a potential in the development of anti-diabetic food products.
